Many people overlook lamb considering it an exclusive treat to be eaten at a restaurant, while often opting to see chicken or beef as “everyday meats”. But this shouldn’t be the case. Lamb is a beautiful meat with a rich, gamey flavor.
And now, thanks to our trusty air fryer, perfectly cooked lamb chops can become a staple meal of any home in the country. There are some who see lamb as a more difficult meat to cook and perhaps that is why so many neglect it. But the reliability and consistency of the air fryer has completely changed the game. Now even the most inexperienced home cook can create exquisite lamb chops at the touch of a button!

Ingredients
- 1 Lb of Lamb Chops
- 2 Tablespoons of Olive Oil
- 1 Tablespoon of Red Wine Vinegar
- 1 Teaspoon Rosemary
- ½ Teaspoon Oregano
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Kosher Salt
- ½ Teaspoon Black Pepper
Red Wine Sauce
Given that our delicious lamb chops are marinaded in red wine vinegar, it only makes sense to serve them with a tangy red wine sauce. Other sauces such as Chimichurri work very well too, but this happens to be our favorite!
Ingredients
- 1 Shallot, finely chopped
- 1 Tablespoon Butter
- 1 Tablespoon Red Wine Vinegar
- 1 Tablespoon Dijon Mustard
- 1 Teaspoon Plain Flour
- 1 Teaspoon Chopped Parsley
- 1 Small Glass Red Wine (approx. 150ml or 5 fl oz)
- 1/3 Pint of Lamb Stock (approx. 200 ml or 7 fl oz)

Marinading The Lamb
You can, of course, cook beautiful lamb chops without marinading. However, marinading meats does 2 important things. Firstly, it infuses the meat with extra flavor. The ingredients for this marinade have been carefully selected to complement the naturally gamey flavor of the lamb. The second benefit is that the acid in the red wine vinegar will actually start to break down the fibers of the meat. Creating a more soft, delicate texture that is truly phenomenal.
In a large mixing bowl, add the olive oil, red wine vinegar, rosemary, oregano, garlic powder, salt, and pepper. Give the mixture a good stir to ensure the ingredients are thoroughly mixed. Now add the lamb chops and turn them over in the marinade to ensure they are completely coated. Next cover the bowl and leave in the fridge for at least one hour.
As opposed to other meats, lamb is quite tender, so you do not want to over marinade it. The ideal time is any where from 1-2 hours. You can leave it for longer but beware, after 5 hours the marinade will break down the muscle fibers too much, and the natural fat and juices of the lamb will escape. This means when it is cooked it will become quite tough.
How Do I Ensure The Temperature Of My Lamb?
Well, first things first, what do we mean by temperature? Temperature refers to how the lamb is cooked. This is also often used to describe steaks. The most well-known temperatures are medium rare, medium, and well done. The easiest way to check is by using a meat thermometer.
Stick the thermometer into the thickest part of the lamb chop. Medium rare should be 125 degrees Fahrenheit (52 Celsius), medium should be 135 degrees Fahrenheit (57 Celsius), and well done should be 145 degrees Fahrenheit (63 Celsius).
The timings for this recipe should yield a temperature of medium, depending on the thickness of your chops. You can adjust the time accordingly so that you get your desired temperature.
Instructions Lamb Chops with Red Wine Sauce
- Preheat the air fryer to 400 degrees Fahrenheit (205 Celsius).
- While waiting for the air fryer to heat up we are going to start the sauce, place the butter and the finely chopped shallot into a saucepan on a medium heat.
- Sizzle for 2 minutes
- Add the flour and stir continuously for 1 minute.
- Now add the red wine vinegar and leave to simmer for 2 minutes.
- Next, pour in the red wine a give a good stir.
- Turn the heat up to high and bring to the boil.
- While waiting for the sauce to boil, take your marinaded lamb chops out of the fridge and place them into your air fryer as it will be preheated by now. Set the timer for 4 minutes.
- Back to our sauce! Stir in the Dijon mustard followed by the lamb stock and the chopped parsley.
- Make sure to continually stir your sauce until the air fryer timer goes off.
- When the timer goes off, flip you lamb chops over, and set the timer for a final 4 minutes.
- Again, the sauce needs to be stirred constantly while it is reducing.
- At the timer beep, remove the lamb chops from the air fryer a put them aside to rest for 2 minutes.
- By the time those two minutes are up, your sauce should have thickened to an almost honey-like consistency and is now ready.
- Serve the lamb chops with a lashing of red wine sauce over the top.
Instructions Lamb Chops Only
- Preheat the air fryer to 400 degrees Fahrenheit (205 Celsius).
- After 5 minutes, place the lamb chops into the air fryer and cook for 4 minutes.
- Flip over the lamb chops and cook for a further 4 minutes.
- Remove the chops from the air fryer and leave to rest for at least 2 minutes.
- Plate up and enjoy!
